Few things are more refreshing than a light, bright cocktail flavored with cucumber. That’s why we love this new addition to our cocktail larder: Cucumber Bitters from Cecil & Merl. They’re handmade in small batches, in Brooklyn, and just a few dashes can do so much for your favorite gin, tequila or vodka cocktail. As you might expect, they pair so well with clear liquors, and with fruits like citrus or melon. It’s rare to find a cocktail bitters that tastes so much like the fresh fruit or vegetable, but here are some of the best we’ve found. 5 ounce bottle.
2 ounces gin
.75 ounce Aperol
barspoon simple syrup
pinch of salt
.5 oz grapefruit juice
.5 oz honey syrup (2 parts honey to 1 part water)
4 dashes Cecil & Merl Cucumber Bitters
cucumber wheel & lemon twist for garnish
Combine all the ingredients in a mixing glass, add ice & stir. Strain into chilled cocktail glass. Garnish with a cucumber wheel and a lemon twist.
