I have recently started to make corn tortillas-they are both nutritious and yummy. I wanted a nice, large comal to cook them.
This one fits the bill nicely. It is carbon steel, which will become slicker with use, unlike synthetic non-stick coatings, which lose slickness. The cooking surface is about 15”, which covers 2 burners. At that size, I can cook 4 tortillas at a time. The texture and taste are pleasing.
The only issue I had is that there was a rough spot along the outer edge. I was able to smooth it out with a rotary tool, but it could have been a safety issue otherwise.
I would be remiss if I didn’t conclude with some praise for the customer service. I got a phone call to confirm my order, which then arrived in 2 days.
